    Roti Skins Recipe

    Does anyone have one?

    Just in case you are all wondering about me and these recipes, I am looking to soop up my cooking skills, trying to use new ideas and ting.

    If you were living close to me(Reading) I would have told you to come across and see how my mom makes them.

    stupes, dred my aunt gone on a cruise and eh make groceries. only me and my cousin here, so is pressha, de odder i sit down home, mih mout was white, mih throat was dry and de cupboard was bare. and is not to say ah goin by joey eh cuz yuh know she cupboard jus as bare as mine.LOL

    Dhalpurie (Split Pea Roti Dough)

    Dhalpurie (Split Pea Roti Skin)

    I doh make roti...but here is a cut and paste, eh...


    Equipment needed: A suitable flat iron surface like a large frying pan, a griddle, or ideally, a flat iron plate called a 'tawah' or 'plateen'.

    1 lb. Flour
    3tsp. Baking powder
    Pinch salt
    ˝ tsp. Saffron
    ˝ lb. Split Peas
    3 Cloves garlic
    2 or 3 tsp. Ground geera (cumin)
    2-3 tbsp. butter

    Boil split peas with saffron, salt and garlic. Do not allow to get too soft. Pass through a grinding mill ( or you can use a blender on a low setting) and fry in 2-3 tbsp. butter. Add geera (cumin) and salt to taste. Cool! Knead flour with baking powder and water to form a soft dough. Rub oil over dough and leave to rest. Cut dough into 6 or 8 pieces according to the size of the baking stone (tawah) or other flat iron surface. Make round balls; open and in the center place about 3-4 tbsp. of prepared peas filling. Pull the sides and close up. Heat baking stone, frying pan or griddle on medium heat; roll out filled ball of dough very thinly. Grease the stone or griddle and put the rolled out roti on to cook. Cook one side turn over and grease, turn over again and grease. Continue with the other filled balls. Do not allow to brown too much.

    Serve hot.

    Storage: If you decide to make a lot of these at once you can freeze them and they should last for quite some time. To freeze, fold each skin in half and wrap in parchment/grease proof paper. Layer individually rapped skins and wrap in foil. Freeze. To use thaw in microwave for a couple of mins. or warm in oven.
