haitian food? who knows how to do it

anyone have advice/recipes on cooking.

made sauce pwa (pois?) and it turned out nice


griot wasnt that good. very flavorful, but it ended up too dry. nevertheless, most online recipes say to cook it for 45 minutes first, before frying... so....

You probably Over-cooked , The griot.

You should Try Making some Black Rice with shrimp or Green Peas. (My Mother makes the best)

putting the pork in an oven helps with the dryness for me...you have the pork and you season it with epis and whatever else you like...you put it on the stove top on low/medium heat...then when it cooks you stick it under the oven at 350 degrees...now there should be some juices left from when you cooked it on the stove stop...so ever 15 minutes or so, drizzle the juice on top of the pork so that it doesn't get too dry...after about 25 minutes, it should be about right
